  • 2 cups rotisserie chicken (finely diced)
  • 4 ounces cream cheese (softened)
  • ¼ cup buffalo sauce
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 1 packet dry ranch seasoning mix
  • 8 egg roll wrappers
  • water (for sealing)

Instructions

  1. In a large mixing bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded cheddar and mozzarella cheeses, and dry ranch seasoning. Mix until well blended.
  2. Place an egg roll wrapper on a clean surface and add about ⅓ cup of the filling to the center. Wet the edges with water to seal.
  3. Fold up the bottom corner over the filling, fold in both sides towards the center, then roll tightly to seal.
  4. Preheat your air fryer to 400°F. Arrange the egg rolls in a single layer in the basket and spray lightly with cooking spray.
  5. Air fry for 3-4 minutes until golden brown; flip and spray again before cooking an additional 3-4 minutes.
