Ingredients
- 2 cups rotisserie chicken (finely diced)
- 4 ounces cream cheese (softened)
- ¼ cup buffalo sauce
- 1 cup sharp cheddar cheese (shredded)
- 1 cup mozzarella cheese (shredded)
- 1 packet dry ranch seasoning mix
- 8 egg roll wrappers
- water (for sealing)
Instructions
- In a large mixing bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded cheddar and mozzarella cheeses, and dry ranch seasoning. Mix until well blended.
- Place an egg roll wrapper on a clean surface and add about ⅓ cup of the filling to the center. Wet the edges with water to seal.
- Fold up the bottom corner over the filling, fold in both sides towards the center, then roll tightly to seal.
- Preheat your air fryer to 400°F. Arrange the egg rolls in a single layer in the basket and spray lightly with cooking spray.
- Air fry for 3-4 minutes until golden brown; flip and spray again before cooking an additional 3-4 minutes.
