Ingredients

Scale
  • 1 pound turkey bacon or chicken bacon
  • 1/2 cup brown sugar
  • 4 tablespoons maple syrup
  • 3 1/2 cups all-purpose flour
  • 3/4 cup water
  • 2 teaspoons instant yeast
  • 1/3 cup granulated sugar
  • 1 large egg (room temperature)
  • 4 tablespoons unsalted butter (softened)
  • 2/3 cup light brown sugar
  • 2 teaspoons cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar
  • 2 tablespoons maple syrup

Instructions

  1. Preheat oven to 375°F (190°C). Prepare candied turkey/chicken bacon by baking it on a parchment-lined sheet with brown sugar until crispy. Chop into strips.
  2. Create Tangzhong by combining water and flour in a saucepan over medium heat until thickened; set aside to cool.
  3. In a mixing bowl, combine flour, granulated sugar, yeast, salt, milk, egg, Tangzhong, and softened butter. Mix and knead until smooth.
  4. Let dough rise in an oiled bowl until doubled in size (about 90 minutes).
  5. Roll out dough into a rectangle and spread with softened butter; sprinkle with brown sugar and cinnamon. Add chopped candied bacon before rolling tightly.
  6. Cut into pieces and place in a greased baking dish; let rise again for about 30 minutes while preheating the oven to 350°F (175°C). Bake for about 25 minutes or until golden brown.
  7. Prepare frosting by blending together butter, cream cheese, powdered sugar, maple syrup until smooth; frost warm rolls.
