  • 1 Lime
  • 2 tablespoon Olive Oil
  • 1 cup Pineapple, diced
  • 1 cup Tomato, diced
  • 1/4 cup Red Onion, diced
  • 2 tablespoon Jalapeño Pepper, diced
  • 1/4 cup Fresh Cilantro, chopped
  • 8 Corn Tortillas

Instructions

  1. Marinate chicken by combining spices, honey, lime zest and juice, and olive oil in a resealable bag with the chicken. Let it sit for at least 20 minutes.
  2. Mix pineapple salsa ingredients (pineapple, tomato, red onion, jalapeño, lime juice, cilantro) in a bowl and refrigerate.
  3. Cook marinated chicken in a nonstick skillet over medium-high heat for about 9 minutes total until fully cooked.
  4. Heat tortillas in a skillet until warm. Slice chicken and assemble tacos with pineapple salsa and desired toppings.
