  • 1 teaspoon dried oregano
  • 1 teaspoon dried crushed rosemary
  • 1 teaspoon dried thyme
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • 3 tablespoons olive oil, divided
  • 1 tablespoon whole grain dijon mustard
  • 1 tablespoon pure maple syrup
  • 1 tablespoon low-sodium soy sauce
  • 2 tablespoons unsalted butter
  • 2 cloves of garlic, finely minced or pressed
  • 1 tablespoon fresh-squeezed lemon juice
  • ½ cup heavy whipping cream
  • 2 teaspoons dried thyme
  • 13 tablespoons water, as needed to thin

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the beef tenderloins dry and season generously with salt, pepper, oregano, rosemary, thyme, onion powder, and cumin.
  3. In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, sear the seasoned beef tenderloins for 4–5 minutes on each side until golden brown.
  4. In a small bowl, whisk together mustard, maple syrup, soy sauce; brush this mixture over the seared beef tenderloins.
  5. Transfer the glazed beef tenderloins onto a baking sheet and roast for approximately 20–25 minutes or until they reach desired doneness.
  6. For the sauce: In a saucepan over medium heat, melt unsalted butter and sauté minced garlic until fragrant. Stir in heavy whipping cream and additional mustard along with dried thyme. Season with salt and pepper; adjust consistency with water if necessary.
