- Kosher salt & freshly ground black pepper, to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried crushed rosemary
- 1 teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
- 3 tablespoons olive oil, divided
- 1 tablespoon whole grain dijon mustard
- 1 tablespoon pure maple syrup
- 1 tablespoon low-sodium soy sauce
- 2 tablespoons unsalted butter
- 2 cloves of garlic, finely minced or pressed
- 1 tablespoon fresh-squeezed lemon juice
- ½ cup heavy whipping cream
- 2 teaspoons dried thyme
- 1–3 tablespoons water, as needed to thin
Instructions
- Preheat oven to 400°F (200°C).
- Pat the beef tenderloins dry and season generously with salt, pepper, oregano, rosemary, thyme, onion powder, and cumin.
- In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, sear the seasoned beef tenderloins for 4–5 minutes on each side until golden brown.
- In a small bowl, whisk together mustard, maple syrup, soy sauce; brush this mixture over the seared beef tenderloins.
- Transfer the glazed beef tenderloins onto a baking sheet and roast for approximately 20–25 minutes or until they reach desired doneness.
- For the sauce: In a saucepan over medium heat, melt unsalted butter and sauté minced garlic until fragrant. Stir in heavy whipping cream and additional mustard along with dried thyme. Season with salt and pepper; adjust consistency with water if necessary.
