  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head of broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and chop the sweet potatoes into 1/2-inch chunks, and chop the onion into 1-inch pieces. Place both on a lined sheet pan and toss with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  3. After 20 minutes, push the sweet potatoes to one side of the pan. Add chopped broccoli tossed with olive oil and a pinch of salt. Place chicken breasts on the pan and brush with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until the chicken is cooked through.
  4. Shred the chicken in the pan using two forks, mix it with remaining BBQ sauce, and serve immediately in bowls.
