  • 1 tablespoon Dijon mustard
  • 2 lbs boneless, skinless chicken breasts
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (optional)

Instructions

  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard; season with salt and pepper.

  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper and sear in the skillet for about 1–2 minutes on each side until golden brown.
  5. Pour the balsamic glaze over the chicken, scraping up any browned bits from the pan. Add the tomato mixture on top.
  6. Transfer the skillet to the oven and bake uncovered for 18–23 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
