  • 1 loaf challah bread (about 6 cups, cubed)
  • 2 cups whole milk
  • 10 large eggs
  • 1 cup shredded extra-sharp cheddar cheese (divided)
  • 1 cup Gruyere cheese (divided)
  • 20 ounces frozen chopped spinach (thawed and squeezed dry)
  • 4 cloves garlic (minced)
  • 1 cup sliced green onions
  • Salt and pepper to taste
  • 2 tsp Dijon mustard
  • 1/2 tsp red pepper flakes
  • 6 tbsp unsalted butter (plus more for preparing casserole dish)

Instructions

  1. In a large bowl, whisk together milk, eggs, Dijon mustard, and red pepper flakes until smooth. Stir in half of the crumbled bacon and season with salt and black pepper.
  2. In a skillet over medium-high heat, melt butter. Add garlic, green onions, and spinach; sauté until heated through, about 4 minutes.
  3. Grease an 11×13 casserole dish with butter. Layer cubed challah bread evenly in the dish. Pour the vegetable mixture over it and gently combine.
  4. Pour the egg mixture over the bread layer. Mix in 3/4 cup each of cheddar cheese and Gruyere cheese, along with Parmesan.
  5. Cover the dish and refrigerate overnight.
  6. Preheat your oven to 375°F (190°C). Let the strata sit at room temperature for 30 minutes before baking.
  7. Sprinkle remaining cheeses and bacon on top of the strata; bake for approximately 30 minutes until puffed up and golden brown.
