Ingredients

Scale
  • 8 ounces uncooked spaghetti
  • 6 strips chicken (cut into small pieces)
  • 1/2 medium onion (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup frozen peas
  • 1/4 teaspoon Italian seasoning
  • 1/2 cup freshly grated parmesan cheese
  • Pepper (to taste)

Instructions

  1. Boil salted water in a large pot over high heat, then add spaghetti and cook until al dente according to package directions.
  2. In a skillet over medium-high heat, cook the chicken until crispy. Transfer to a paper towel-lined plate, leaving the rendered fat in the skillet.
  3. Sauté chopped onion in the skillet for 3-4 minutes until softened; add minced garlic and cook for an additional 30 seconds.
  4. Pour in chicken broth with frozen peas and Italian seasoning. Cook until the liquid reduces by half.
  5. Reserve 1/4 cup of pasta water before draining spaghetti. Add this reserve along with parmesan cheese and cooked chicken to the skillet. Toss in drained pasta until well combined.
