  • 2 medium apples, cored and diced
  • ½ teaspoon ground cinnamon

  • 8 ounces mascarpone cheese
  • ¼ cup confectioner’s sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a 13 x 18 x 1-inch sheet pan with butter, flour, and parchment paper.
  2. In a stand mixer, whip egg whites until foamy. Gradually add half the granulated sugar until stiff peaks form; set aside.
  3. In the same mixer bowl, beat egg yolks with remaining sugar and vanilla until well combined.
  4. Gently fold in whipped egg whites and sifted cake flour until just incorporated.
  5. Spread the batter evenly in the prepared pan and bake for 8–12 minutes until lightly browned.
  6. Cool on a towel dusted with confectioner’s sugar, then roll into a log while warm.
  7. Prepare apple filling by cooking diced apples with spices and brown sugar until softened.
  8. Beat mascarpone cheese with confectioner’s sugar until creamy.
  9. Unroll the cooled cake, spread mascarpone filling, layer on apple filling, re-roll gently, trim edges if needed.
