  • 2 teaspoons vanilla extract
  • Ground cinnamon

  • 3 large eggs
  • 55 g unsalted butter (melted) for streusel topping
  • 50 g all-purpose flour for streusel topping
  • 50 g brown sugar for streusel topping
  • 20 g rolled oats for streusel topping

Instructions

  1. Preheat oven to 175°C (350°F) and prepare the springform pan by pressing the crushed biscoff cookies mixed with melted butter into the base.
  2. Combine diced apples with brown sugar, cinnamon, and cornstarch in a saucepan; cook until slightly softened.
  3. Beat cream cheese until smooth; add Greek yogurt, vanilla extract, sugars, spices, and eggs until just combined.
  4. Layer half the cheesecake mixture over the crust, add cooked apples on top, then pour remaining cheesecake mixture over.
  5. Create the streusel topping by mixing melted butter with flour and oats; sprinkle on top.
  6. Bake for about 85 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for several hours or overnight.
