  • 1 can RO*TEL Diced Tomatoes & Green Chilies
  • 1 can tomato sauce
  • 1 can pumpkin puree
  • 1 can corn
  • 1 can green beans
  • 2 cans beans (rinsed)
  • 1 packet or 1/3 cup taco seasoning mix
  • 1 1/2 cups water

Instructions

  1. In a large stew pot over medium heat, brown the ground meat with the diced onion until the meat is fully cooked and the onion is translucent.
  2. Add all remaining ingredients to the pot: RO*TEL (with juice), tomato sauce, pumpkin puree, drained corn and green beans, rinsed beans, taco seasoning mix, and water.
  3. Bring to a boil over high heat. Once boiling, reduce the heat to low and let simmer uncovered for about 30 minutes, stirring occasionally.
  4. Taste and adjust seasoning if needed before serving hot.
